Simple dairy-free frittata

INGREDIENTS
8 eggs
2 tbsp club soda
Olive oil
1 tbsp garlic
1 shallot, minced
2 cups spinach
Salt & Pepper to taste

DIRECTIONS
Preheat oven to 375. Using an oven safe pan, saute garlic and shallot until fragrant. Add in spinach and continue to cook until spinach is just wilted.

While that’s cooking, mix together the eggs and club soda. Pour egg mixture into a mixing bowl with sautéed veggies and combine. Then, add a pat of butter to the pan and cook for for about 5 mins until edges firm up. Transfer to the oven and cook for 15 mins or so until center is fully firm.
