Quick greens & onions

INGREDIENTS
1 sweet onion, thinly sliced
Extra virgin olive oil
3 lbs greens (spinach, Swiss chard or beet greens), chopped
Salt & Pepper to taste

DIRECTIONS
In a large pan, saute the onion in olive oil until translucent. Add all the greens; cover and cook over low until just wilted and brightly colored. Add water during cooking if pan dries out.
