Ikarian longevity stew

INGREDIENTS
1/2 cup avocado oil, divided
1 red onion, finely chopped
4 cloves garlic, finely chopped
1 fennel bulb, chopped
1 cup canned black-eyed peas
1 large, firm ripe tomato, finely chopped
2 tsp tomato paste
1 bunch dill, chopped
Salt to taste

DIRECTIONS
Heat half the avocado oil over med heat and add the onion, garlic and fennel. Cook until soft. Add black eyed peas and toss to coat in oil. Next, add the tomato, tomato paste, and enough water to cover the beans by 1”. Add bay leaves. Bring to a boil then reduce heat to simmer. Add chopped dill and season to taste.
