BALANCING KITCHARI

INGREDIENTS
2 tbsp ghee or coconut oil
1 tsp ground each: cumin and mustard
1 tbsp ginger 
14 oz can Mung beans or lentils
1 package RightRice
3-4 cups water 
1 tsp turmeric
Salt, garlic powder, and onion powder to taste

DIRECTIONS
Heat coconut oil over medium-low heat. Add cumin, mustard, ginger, and sauté for a couple minutes.

Stir in the rice and drained mung beans, and cook for 2 minutes. Add water and raise heat to high. Bring to a boil, then reduce heat back to medium low, and stir in turmeric, spices and salt. Cover and cook 5-10 mins, until rice is soft.

*Optional - add a handful of chopped spinach or chopped, steamed broccoli near the end of cooking.
